Three Things I’ve Loved This Week

Hey friends!  It’s been a fun and busy week over in my neck of the woods.  Just popping in to share three things I have really enjoyed this week! Also, I think I am jumping in to a local 5k race tonight!  I really wanted to run one, but despite the many offered in my area in the summer, I hadn’t been able to make any of them work.  This is an evening race, which would not be my first choice, but sometimes you take what you can get.  How do I fuel for an evening 5k race?!

Anyway, here are three things I’ve loved this week, in no particular order:

1) Taking my girls to the track with me for some speed work.  My seven year old ran an entire warm up mile with me, and my younger daughter alternated running and walking for two laps.  Then while I ran my 800 repeats, they set up their own “triathlon”, stopping at each number on the track to complete a different exercise.  They had so much fun, and have already asked when we can go back.  I also got a great workout in, so that’s a double win in my book.

2) Mug Cake Recipes

I had read about these before, but found some great versions on Pinterest and decided to make one this when I had a craving for something sweet the other night.  It was pretty tasty!

Here’s how you make it:

Ingredients:
2 tablespoons coconut oil
¼ teaspoon baking powder
1 egg
2 tablespoons almond butter
1-½ tablespoons melted coconut oil
1-½ tablespoons maple syrup
1 tablespoon coconut milk (or almond milk)
¼ teaspoon vanilla extract
1 small handful of mini chocolate chips
Mix everything together well and then microwave for about two minutes.  Let cool a bit but enjoy while still warm!  Delicious.
3) Spending time with family.  My in-laws made a last minute trip to visit us for a couple of days, and the girls always soak up time with extended family.  I also got some much needed help in my garden.
